This month's menu is Seared Foie Gras with cider gastrique/brioche French toast/blistered cranberry paired with Dr. Frank "Celebre" Cremant (Keuka Lake), Pan-Seared Rainbow Trout with Moroccan spiced squash puree/frisee/bacon vinaigrette paired with Hermann J. Wiemer Semi-Dry Riesling, 2013 (Seneca Lake), "Age of Darkness" Braised Short Rib with pumpkin agnolotti/crispy Brussels paired with Lamoreaux Landing "76 West" Meritage, 2011 (Seneca Lake) and Stuffed Baked Apple with Painted Goat Farms ricotta/walnuts/maple crust paired with Heron Hill Late Harvest Vidal Blanc, 2008 (Keuka Lake). $50 per person.
